Seasonal vegetables in April
April is the period when nature gradually comes to life and the first spring vegetables and winter leftovers appear on the shelves. At this time Ukrainians can enjoy both early crops and root vegetables, well preserved after winter.
Radish
- Benefit: contains a lot of vitamin C, improves digestion and boosts immunity.
- Additional: has a mild diuretic effect and helps to eliminate toxins.
Green onion
- Benefit: rich in vitamins A, C, K, folic acid and immune-boosting phytoncides.
- Extra: improves digestion and reduces inflammation in the body.
Sorrel
- Benefit: source of vitamin C, potassium and iron, good for the cardiovascular system.
- Extras: promotes blood purification and improves metabolism.
Spinach
- Benefit: rich in iron, magnesium and folic acid, good for the haematopoietic system.
- Optional: has antioxidant properties and improves skin health.
Salad leaves (Romaine, lettuce)
- Benefit: low in calories, contain fibre that improves digestion.

Beetroot (last year’s beetroot, well preserved)
- Benefit: source of antioxidants, has a positive effect on haemoglobin levels.
- Additional: cleanses the liver and promotes better bowel function.
Carrots (last year’s carrots)
- Benefit: contains beta-carotene, improves eyesight and supports healthy skin.
- Additional: strengthens the immune system and helps normalise cholesterol levels.
Cabbage (white cabbage, Peking cabbage)
- Benefit: rich in fibre, vitamin C, helps to strengthen the immune system.
- Additional: improves metabolism and is good for the intestines.

Seasonal fruits in April
In April in Ukraine there are almost no fresh fruits, but you can still find them:
Apples (last year’s varieties are well stored)
- Benefits: contain vitamins A, C, E, iron and fibre.
- Extras: help maintain heart health, lower cholesterol.
Pears (winter varieties)
- Benefit: high in potassium, which is good for the cardiovascular system.
- Additionally: improve intestinal function and normalise digestion.
Frozen or dried berries (cranberries, blueberries, sea buckthorn, rose hips)
- Benefit: contain a large amount of antioxidants, improve immunity.
- Additional: strengthen blood vessels and support eye health.
April is the time when you should add a lot of greens, root vegetables and light vegetables to your diet to help your body adapt to spring. This is the time when it is important to get enough vitamins to support the immune system after winter and energise the body.
